Grilled Oysters with Butter

This grilled oyster recipe adds extra flavour with parsley, garlic, and Tabasco.

Ingredients:

  • 8 whole live oysters
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, softened
  • Squeeze of lemon juice
  • Dash of Tabasco
  • Cracked black pepper
  • 1 tablespoon very finely chopped parsley

Serves: 2

Method:

  1. Prepare the Butter Mixture: In a bowl, mix together the garlic, olive oil, butter, lemon juice, Tabasco, black pepper, and parsley until well combined.
  2. Shuck the Oysters: If you can shuck oysters, open all 8 and place them on a baking tray. If not, place the closed oysters with the flat side of the shell facing upwards on a baking tray. Use piles of rock salt or rice to keep them upright.
  3. Grill the Oysters:
    • If shucking, divide the butter mixture between the shells and place under the grill for 3-4 minutes.
    • If not shucking, place under the pre-heated grill for 1 minute to start opening the shells. Remove from the grill, use an oven mitt to protect your hands, and slide a shucking knife or a sturdy round-bladed knife into the gap between the shells to open them. Remove the top shell and place the oysters back on the tray. Divide the butter mixture between the shells and grill for another 2-3 minutes.
